JUNIOR SOUS CHEF – MIDDLE EASTERN CUISINE
Job purpose
The Junior Sous Chef – Middle Eastern Cuisine is responsible for food production, menu development, food purchase specifications, and recipes. This role involves supervising, mentoring, and motivating staff, as well as maintaining the highest professional food quality and sanitation standards. The Junior Sous Chef must be of Arabic/Middle Eastern descent and specialize in Middle Eastern food, with the ability to work in non-Halal kitchens.
Duties and responsibilities
Ensure Compliance to Rules and Regulations
- Ensures compliance with all NagaWorld’s standards or relevant industry standards during all aspects of work
- Ensures adherence to NagaWorld’s Code of Conduct, Internal Rules, and Regulations at all times
General Job Functions
- Plans, organizes, and coordinates kitchen operations, assigns projects, and resolves staff issues
- Supervises kitchen staff to ensure standards of food preparation and presentation
- Ensures kitchen equipment is maintained and issues repairs as needed
- Trains staff and corrects production methods when necessary
- Minimizes waste and ensures portion control for food cost management
- Participates in creative selling and presentation ideas
- Coordinates with the Stewarding Chief to maintain kitchen cleanliness
- Ensures culinary products are visually appealing and adhere to authentic Middle Eastern cuisine
- Maintains recipe files and conducts on-the-job training
- Participates in menu planning and coaches staff on efficient working methods
- Any other tasks assigned
Qualifications
- High School Graduate or equivalent education required
- Minimum 5 years of experience related to the job, preferably in an upmarket café or restaurant sector
- Must be able to work in non-Halal kitchens
- Proficient in Microsoft Office, including Excel, PPT, Word, and Outlook
- English Language Proficiency
Working conditions
This position may require extended working hours and may include evenings, weekends, and public holidays.
