Job purpose

The Food & Beverage Manager is responsible for overseeing all aspects of the food and beverage operations within the establishment, ensuring the delivery of exceptional dining experiences that meet guest expectations and organizational standards. This role involves managing the food and beverage team, developing menus, ensuring compliance with health and safety regulations, and maintaining quality control. The Food & Beverage Manager collaborates with other departments to create and execute special events and promotions, while also monitoring financial performance and optimizing profitability.

The ideal candidate possesses strong leadership, communication, and organizational skills, along with a deep understanding of culinary trends and guest service excellence.

Duties and responsibilities

Ensure Compliance to Rules and Regulations

  • Ensures compliance with all NagaWorld’s standards or relavant industry standards during all aspects of work
  • Ensures all employees adherence to NagaWorld’s Code of Conduct, Internal Rules, and Regulations at all times

General Job Functions

  • Assists in preparing the F&B budget, reviews daily food and beverage costs, and analyzes monthly Profit and Loss statements to maintain alignment with budget and forecasts
  • Ensures appropriate staffing levels, recruits, orients, and develops staff, and coordinates team work plans while addressing operational challenges and resolving issues
  • Supports the Director of Food & Beverage to maintain high service standards across all dining outlets, ensuring quality in food presentation, taste, and beverage temperature
  • Conducts daily inspections of F&B areas, addressing any irregularities and maintaining creativity and quality in wine, cocktail, and mocktail presentations
  • Implements the FSMS program, enforcing cleanliness standards and hygiene practices for all food handlers
  • Assists in the development and maintenance of the F&B Operations Policy & Procedure Manual, ensuring adherence across departments
  • Facilitates open communication with F&B teams, sharing updates and key information to enhance daily operational efficiency
  • Maintains comprehensive filing systems for purchases, vouchering, schedules, and reports, while tracking and recording relevant data for year-on-year comparisons
  • Monitors monthly inventory turnover of food and beverage supplies to optimize resources and reduce costs
  • Any other tasks assigned

Qualifications

  • Bachelor’s Degree in Hospitality Management or equivalent education required
  • Minimum 10 years of in front-of-house operations within resort/hotel settings, with proven expertise in Food & Beverage or restaurant General Management roles
  • Solid understanding of budgeting, profit & loss analysis, and cost control
  • Strong leadership qualities, with experience in recruitment, training, and development of staff to maintain high service standards
  • Knowledge of food safety, health regulations, and industry standards
  • Comprehensive knowledge of high-level Food & Beverage operations, including customer service standards and strategic oversight, with a focus on delivering exceptional guest experiences and optimizing operational efficiency
  • Experienced with POS or restaurant management software
  • Proficient in Microsoft Office including Excel, PowerPoint, Word, and Outlook
  • English and Mandarin Language proficiency

Working Conditions

This position may require extended working hours and may include evenings, weekends, and public holidays.
